
Super Simple Vegan Breakfast Ideas

While this lofty goal sounds great, that doesn't change the fact that we still have little to no time to cook every single morning. So what does any power mom do? Find a way to make breakfast with minimal effort but with maximum nutritional value. Make it work!
So, we decided to create recipes that only had three ingredients! Less ingredients also means less mess which means less cleaning…you get the gist! Here are our favorites:
1.) Coconut Cranberry Chia Pudding
This recipe is super easy to throw together in about a minute however it is much better if you make it the night before and let the chia seeds sit and absorb the coconut milk. If you forget to make it the night before, stir everything together in a bowl before you brush your teeth and get dressed and it should be a little thick in a matter of minutes! Chia seeds are rich in Omega 3's, have tons of antioxidants, fiber and calcium too. Sounds like a great food to begin the day with.Ingredients:
1 cup coconut milk, sweetened1/4 cup chia seeds
1/4 cup dried cranberries
Directions:
-Stir all the ingredients together in a bowl and let sit in the fridge over night (or at least for an hour)-Enjoy cold! (Toss in some honey or maple syrup if you like your pudding a little sweeter)
2.) Three Ingredient Pancakes
Pancakes seem like something that should take a lot of time but don't be fooled, this vegan pancake batter is made in the blender and then pan fried in coconut oil- they will be cooked and ready to eat in about 5 minutes! And did you know oat flour is a soluble fiber which is great for digestion? Not only will everyone love how these pancakes taste but they will be super impressed that you whipped up pancakes on a busy Monday morning!Ingredients:
3 cups oat flour (rolled oats that have been blended into a powder)2 cups coconut milk
2 ripe bananas
Directions:
-Blend all the ingredients together in a food processor or blender-Heat coconut oil in a small frying pan and pour in about 1/3 cup pancake batter
-Flip the pancake over after it begins to brown on the bottom (about 2 minutes)
-Cook the other side for two more minutes and then serve with syrup, fruit or eat plain!
3.) Vegan French Toast
You do not need eggs to make delicious French toast! Coconut milk not only adds a nice subtle coconut flavor but it also can improve heart health by lowering blood pressure. Be sure to use some sturdy, crusty bread to get the best results. One bowl, one pan and poof- French Toast!Ingredients:
6 slices of crusty bread1 cup coconut milk, sweetened
2 tablespoons millet flour
Directions:
-Whisk the coconut milk and flour together in a bowl. Add cinnamon or vanilla if you'd like a little more flavor (and if you have time!)-Dip the bread in the milk mix and then place directly into a hot frying pan with a little coconut oil.
-Cook then French toast over medium heat for 3 minutes on each side.
-Serve while hot with maple syrup, fresh fruit or plain!
4.) Quinoa Pudding
Do you have some left over quinoa from the night before? Then this is the perfect recipe for you! Not only is this pudding delicious and quick but it is a great way to use leftovers. Oh, and quinoa is one of the most protein rich foods around- I'll take a bowl!Ingredients:
1 cup cooked quinoa1 cup strawberries
3/4 cup coconut milk
Directions:
-Bend the coconut milk and strawberries together until smooth.-Pour the milk mix over the quinoa in a small bowl.
-Microwave the mix for one minutes and enjoy while warm. (This is also delicious cold!)
5.) Sunbutter Banana Toast
This is a super simple "recipe" but it is tasty, quick and can easily be eaten on the go. It is also perfect for people who are tired of a regular peanut butter sandwich. Sun butter is a yummy new topping that you will love and can easily enjoy as you know it is healthy (spread some extra on top!). Made from sunflower seeds, sun butter is high in protein, vitamin E and lots of healthy fats.Ingredients:
Two Slices of whole grain bread4 Tablespoons of Sun butter
1 ripe banana
Directions:
-Spread 2 tablespoons of sun butter on each piece of bread.-Slice the bananas and lay the slices across the bread on top of the sun butter.
-Enjoy your open face sandwich! (Drizzle with some honey or chia seeds for an extra nutritional boost)
Hopefully these recipes will help make your morning breakfast routine easier, tastier and more nutritious. I know that I now look forward to breakfast every morning rather than dread it. Goodbye breakfast stress! Hello delicious morning recipes.

I can understand vegetarian diets but banning eggs? From my understanding they are one of the healthiest things we can eat! Assuming this article is correct, eggs are a superfood : https://youngofficial.com/10-reasons-you-should-be-eating-eggs/

4/19/2018-For the first time today, I tried 'The Complete Cookie' from Lenny and Larry. I was looking for something good to snack on at a Wal-Mart when I noticed it on the shelf with the power bars, etc. I couldn't believe it was not made with eggs or dairy of any kind. Let's put it this way, I will buy them again! Thanks for a good alternative snack that actually fits in with a no dairy/no egg vegan menu and is non soy. No other crappy junk in it either.
